Mark place for the cut, take a metal straight edge and place across the mark. Take a utility knife and cut through the veneer first, then use a saw blade with fine teeth to finish the cut.

I cut the veneer with a Stanley knife held against a metal rule. The knife must have a new very sharp blade though

Experience
all 3 are good answers so far…but make sure that you can cut all the way through the veneer so it will not splinter, and do not use a coarse blade, use a fine one so as not to shatter the substrate..
